Remember when I wrote about a sweet potato fries recipe? It was easy and quick to make, and more importantly, it was healthy! Well, I accompanied those fries with homemade salmon burgers, broccoli (missing in action) and a bit of mayonaise with herbs. So, below you will find the recipe to these healthy and delicious salmon burgers.. but these did take a bit longer to make!
Though it might take some time to make, the dish is still quite simple. You will need the following ingredients: 500 grams of salmon filet (for 4 big salmon burgers), 1 onion, 1 egg, 2 breads sliced into small pieces or use breadcrumbs, 1 teaspoon of lemongrass, 1 teaspoon of garlic, a bit of salt and spices to your liking.. I chose: cayenne pepper, black pepper, paprika powder and cumin.
The first and most important step is to cut everything up into small bits:
- cut the salmon as small as you can or mince it in a kitchen machine (I did the latter).
- cut the onions into small bits and whisk 1 egg
- grab all your ingredients
Now you need to put all of the ingredients into your mixer (kitchen machine) and mix it together. You can also do this by hand, but this is rather tiring and takes up more time... so the kitchen machine is my greatest helper in the kitchen - besides my boyfriend, of course! So the ingredients are mixed together and stick well, which means you can start creating the salmon burgers by taking a bit of your mix and making a big ball in your hands. Once you have a ball shape you can flatten the ball into the shape of a burger. Or do like me.. and use spatula (because I did not feel like getting my hands dirty); this will mean they will not be perfectly shaped.. luckily, I can live with that! This is what the burger should look like (as you can see I added extra black peper and cayenne pepper on the burgers in the frying pan):
Grab a frying pan and a bit of vegetable oil (I used sunflower oil) in there (I varied between 2 to 3 tablespoons of oil) so the salmon burgers would get a nice brown color on the outside and would be softly cooked on the inside (not dry). Flip the burgers after about 3 minutes and make sure it gets a wonderful golden brown color without becoming dry. How can you check this? Well, by taking one salmon burger and cutting it in half.. to see if the burgers are rare or almost done. When almost done you can just take the frying pan off the heat and leave the lid on it for a short bit while you prepare your plates.
As you can see, it is quite an easy recipe but it is so delicious. I was so happily surprised with how good the salmon burgers were and they went well with the sweet potato fries and broccoli. Unfortunately, the latter was missing in action on the photos.. oopsie daisy! Most of the work for this recipe is in the preparation, because the actual "cooking" only takes up several minutes!
